As final preparations are underway for the opening of the State Fair, there are a handful of food vendors for whom this year will be their first experience. George Atsidakos is with MinneApple Pies, they’ve applied to get into the Minnesota State Fair in the past but this is the first year they’ve been accepted. Atsidakos says they have perfected their product and are ready, “We have homemade deep-fried apple pie. Made 100% from scratch. Served with vanilla or cinnamon ice cream.” Matt Cranston’s “Blooming Onion” booth is just a few steps away from the “MinneApple Pies” booth. Cranston has spoken with Atsidakos, offering veteran advice, “You can’t run out of food, and you have to have enough employees, and you have to be able to make it the whole day.” Atsidakos’ booth is on Judson by the Dairy Building. He says his booth will open between 6 and 7 am and remain open as late as midnight.
